A lowcountry style Thanksgiving

Day 112 – Happy Thanksgiving everyone!

It was a very special day for us. We hosted our first Thanksgiving dinner at our home. We picked up my grandmother and Elizabeth’s grandmother from their respective homes. Elizabeth’s brother and my sister, brother-in-law and niece drove up from Charleston.

We didn’t have time for a full Thanksgiving dinner, so we opted to go lowcountry style with a Beaufort stew (also known as Frogmore stew and lowcountry boil).

So, how do you make a fantastic Beaufort stew? I’m here to tell you.

Serves 12

Ingredients
1/4 cup – Old Bay seasoning
4 lbs – small red potatoes
2 lbs – kielbasa smoked sausage cut into 1/2 in slices
6 ears – fresh corn, halved
4 lbs – unpeeled shrimp

Directions

  1. Fill container of propane cooker halfway with water
  2. Add 1/4 cup Old Bay, bring to boil
  3. Add potatoes and cook
  4. Wait 10 mins
  5. Add sausage and corn
  6. Wait 10 mins
  7. Add shrimp
  8. Wait 3 mins
  9. Strain water
  10. Serve with cocktail sauce
